The Cuts

From the block, over the coals

A short card, built around the block. Every cut comes from a named British estate, is aged in our own room and finished over English charcoal.

Every cut is finished over English charcoal on the Josper and rested before it reaches you. Served with bone-marrow gravy and a choice of house sauces. Fish, poultry and a garden main are always on the menu. Please tell us about allergies before you order and we will talk you through the card.

Behind a wall of glass at the back of the dining room, sides of single-estate British beef hang on Himalayan salt for up to forty-five days. Time, cold air and patience concentrate the flavour and tenderise the grain: nutty, mineral, deep.

We buy whole and butcher in-house from six farms we know by name, then finish every cut over English charcoal on the Josper at twelve hundred degrees. Nothing is rushed, nothing is hidden. Ask, and we will walk you to the room.

The Bar

Cocktails built for before and after the table, and a whisky list worth staying for.

Before you arrive

Is there a dress code?

Smart-casual by day and smart in the evening. We ask guests to avoid sportswear and trainers for dinner service.

Do you cater to dietary requirements?

Always. Alongside the grill we keep a daily fish, a poultry dish and a garden main, and we are happy to accommodate allergies with notice.

Do you take walk-ins?

The bar welcomes walk-ins for a cut and a glass. For the dining room, and especially at weekends, we strongly recommend booking ahead.

Can you host a private event?

The Sterling Room seats up to fourteen for bespoke menus and the Butcher’s Table tasting. Enquire and we will design the evening with you.

Where can we park?

Green Park and Bond Street stations are a short walk. NCP Mayfair is two minutes away, and evening valet can be arranged on request.
